The best rings. Soak in buttermilk, dredge in flour with (lots) of black pepper, Cajun seasoning, other spices, or no seasoning at all, and deep fry.

I've had bad luck keeping the coating from flying off the rings as soon as they hit the fryer, with just seasoned flour. I'm sure there is a trick but I just don't know it. What's yours?

Jay, I think the buttermilk is the key. Also, make sure the oil hits 350* for each batch.

Some may like beer-battered rings, but I don't--often not crisp, and too much batter. To get an "A" from me, a ring can't be beer-battered, frozen, or thick-cut. Just saying'. The rings I make started with a recipe from Ralph and Kacoo's, a restaurant in New Orleans, and I seldom get rings like that except at home.
