Amberjack again.

I have a 3-4 lb piece of Amberjack. I want to smoke it to make a dip. Do I treat it like Salmon and brine it? I know friends that do Kings that never brine. Any, how much wood and how long would be helpful.

I don't think brining will hurt anything, but if your dip will be mayo based, I don't think you'll need the extra moisture.
