Hi Everyone,
My Amerique is full Im using all four racks.
6 pork shoulders and 1 Brisket.
2 butts per rack and 1 brisket on the top rack.

Looks FANTASTIC.. I can't wait to get my Amerique.. one day fairly soon. Wish I had one right now as I'll be cooking for a bunch of guys in a couple of weeks. Guess I'll have to live with the 008.. cook everything ahead of time and put in ziplocks to reheat later. Heck, that's ok.. they taste better the next day anyhoo..

Southern CA.
Right now I have 3 briskets going first one just hit 195.
Took it out and wraped it and put it into the ice chest.
The other two are at 177.
Im running out of time I have to leave in another 2 hours max out the door.
I will try to take a couple photos of the briskets.

Everything looks fantastic! Can't wait until they come out with a "Scratch-n-Sniff" monitor. Thought for sure I smelled smoked pork butt!
