aTm,

I'm with you, it would seem that 2 smokers would always be better than one. BUT, as electro tech stated the AmeriQ has features that are normally found on CS's commerical line of smokers.

A person needs to do a little studying, thinking on what one's needs are.

How many people you cooking for? Are you going to be hanging chubbs?

Just one small CS has been plenty for me, but to each his own.
The AmeriQue has a Cook Hold Temp. which is Intergrated with the Probe. This is a great feature for holding meat temp. for and extended preiod. Just set the desired meat temp. and the Amerique adjust the temp to the desired setting. Say you set your cook temp to 225 and the probe temp is set at 190, the AmeriQue will cook the meat at 225 the automaticly reduce temp to hold the meat at 180 for up to 6 hours. This is a great feature.

the 'hold temp' is 140 degrees and works with both the meat probe and timer. When meat cooks to the preset temp the unit will go to the hold mode of 140 degrees. OR when the preset time runs out the unit goes to hold. When the unit goes to the hold mode the timer starts and counts up to indicate the amount of time in hold mode.

I have had an Amerique for 1.5 years and my best friend and father-in-law just bought an Elite for themselves. After playing with their smokers I can say the larger heating element in the Amerique gets back to temperature must faster than the smaller models after opening the door during a cook, and also gets the temperature up faster with a full load.

I would recommend either unit, but in my mind bigger is better!
