I picked up 2 small (4.5 lb)what I thought was real brisket at Sam's club. I think they were flats. The package said beef brisket for corned beef, It's all I could find. It was cryo wrapped and had a spice package in it, which I discarded. It was not what I expected, looked and tasted like corned beef after I smoked it. Is this what a real brisket is? Was something done to the meat to make it "corned beef"? Sorry for my naivety. Thanks.

CORNED BEEF is far from your run o' the mill brisket. I have also accidentally bought a corned beef from Wallyworld. It looked identical to their roasts and I wasn't paying attention. Big mistake...the wife took one bite and went to the fridge for something else.

Try to track down a 8-12 pounder from your Sams Club. Make sure that it isn't just the flat as they tend to dry out.
What you bought was Corned Beef Brisket..it was brined. It probably turned out great after you smoked it...."PASTRAMI" ?????? Start making some Rueban Sandwiches!!!

What you wanted was a full packer cut brisket.....anywhere from 10 to 14 lbs in weight... They are very hard to find in Maryland. They are not in any solution either, just a big cut of beef. After it's smoked, it taste's like smoked beef and Oh so tender!!!!

But, atleast your smoked corned beef turned out some good pastrami!!!!
