I'm no expert on goat ,but have eaten it a number of ways.

Goat is like venison,in that it is lean and has four legs.

Older males,when rutting,have scent glands -somewhat like venison.

That is the end of the similarities.

Young/kid goat is a little like lamb and lends itself to quick grilling.

Older goat is often sold as bone in chunks ,by the bag ,to use in curries/stews.

The goat marketing companies,have a number of innovative ways to utilize/get rid of goat.
