Migas can be made with countless variations,but basically scrambled eggs,with leftover tortilla pieces/chips,etc.

May have some chorizo,cheese,peppers,etc.

As the eggs set up,mix in the tortillas.

Folks that open restaurants there,try to give away pork sandwiches in the lobby and people won't take them.

Spares are about as close as you can get,or maybe mix in some butt with beef sausage[hotguts]
