Pear wood works real well, David. How much does your local store sell it for? If you have a cookshack, you don't need much wood. I'd collect from your local pruning neighbors. Let the wood cure before you use it in the cookshack. If you're using a Brinkman's like we were using before, you can even use the wood green, little amounts at a time. Then you don't add much water to your pan.
