Newbie here.....just received my smoker yesterday and I plan on trying one slab of ribs tomorrow. Question, after I put the rub on and let it sit over night, do I then bring them out of the fridge and let them get to room temp before I start the smoking clock? Should I pre heat the smoker? How long for one slab? Any good ideas on how I can get the meat to damn near fall off the bones? Thats alot of questions!!!!!! Any help would be appreciated. Thanks ERIC

Yes, there is a LOT of helpful information, and the find, or just reading the rib forum will even answer questions you haven't thought of yet.

Don't rub them overnight, the salt will make them taste hammy.

To get them fall off the bone, you actually overcook them.

The duration varies a LOT with the weight of the rack (you'll see me mention that a lot)

The biggest problem is that it's not just a recipe you can copy. Smoking is about knowing what happens and how to adjust for all the variables.
