I don't know if this goes here or in the Sausage forum. I saw a picture of a Bacon and Cheese wrapped hot dog while watching the Little League World Series. I decided to give it a shot. 1/4 pound all beef hotdogs was the starting point. I smoked these in the SMO-66 with some Jack Daniels Oak. I wanted them cooked through. I pre-cooked the bacon until almost crisp, but still limp enough to wrap. Wrapped the dogs with White Cheddar and Jalapeno cheese, and then the bacon. These went on the BBQ Grill until the bacon crisped. I lost a little cheese to the grill. They turned out pretty good, but will simply put the cheese and bacon on the bun with the dog next time.
