Just my 2 cents worth, but I would goto the store and get a bag of TenderQuick and some brown sugar. Look for a couple of posts in the Forum called "Made some bacon" for an idea of what to expect from side meat. I only made Buckboard bacon from a butt once and wasnt that impressed with it. But others here LOVE it, so who am I to judge? ON a related note, tonite I get to start curing on 45 lbs of sides. Two weeks from now Ill be smoking it. I gave away all I had in the freezer for Christmas!
