Temperature control on FEC 100

I have a brand new Fast eddy FEC 100, when I try the standard program like say #5 baby backs, the smoke starts( supposedly at 180) it goes to 300-350 then the over temp pops the unit off till it cools down, I tried a probe cook before, the oven temperature usually runs 100 degrees over , I talked to Bill Vice and he told me to shove the drip shield all the way over again the left wall to protect the oven temperature probe but this doesn't seem to keep the unit from heating back up to 300-350 when cook temperature program supposed to be 250. 🤷🏻‍♂️

Since it is "brand new" keep working with the folks at CS. from a knowledge and warranty point of view.
