How long do I keep beef in Kevi's jerky marinade with Tender Quick? How long is too long? I looked pretty good, but couldn't find an answer anywhere.
Any help would be appreciated!

Not sure about Kevi's exact time, but I thought I read overnight, but not sure could stand corrected here. Kevi's receipes generally are for one pound and one Tbl.spoon of Tender Quick.
Overnight may be too much, but can't be too safe.
I use a receipe similar to his HighPlains, but I follow the Tender Quick method on the package, usually 4-6 hrs. (8 seens too much) and rinse before marinating overnight. I always use flank. I always keep surplus jerky in the fridge, just to be safe.

I let it go about 24 hours in the cure with Kevi's recipe, let it naturally drain. Seems pretty good to me and everyone thinks it much better than store bought.
