I cook all my meats at 225� and it takes me around 7-8 hours to finish a rack of beef ribs. It has taken me as long as 8-9 hours to finish spares.

Anytime you have chewy meat, it is a sign of not cooking long enough. Just extend the time you cook.

Not sure about the accuracy of meat temps in rib meat....the meat is so thin. They need to be above 190� for the temnderness we all seek.
