Best weight for St. Louis Ribs

I wonder if the weight difference is because of size (i.e., the age of the animal), or are they just cut differently (more or fewer ribs)?

Some of my many questions. I've just not seen these options a lot till now.

Living where we do there are not a lot off  store bought products so I've  been looking on-line.

I very rarely buy meat online. I buy heritage pork belly from Snake River Farms, and I buy country ham products from Burger's Smokehouse. I buy duck from Joe Jurgielewicz & Son, Ltd. in PA since I'm close to them and their duck is great. That's about it for online meat for me.

Interesting article.

I'm still confused as they say Snake River Farms sells 1.5 Lb.  and Crows Cow sells 1.5 Lb - 3.5 Lb.

Might the 1.5 LB be a bit better as I'm thinking it could be from a younger animal?

I'm betting they trim for uniformity of weight.

I personally would choose the 2lb option making it easier to work with with the equipment i have.

Then again as time goes on ill deff be stepping up my game.
