Best wood for common fish to smoke

Howdy

Most folks seem to favor something like alder for lots of fish.

We don't have much around,so apple works for me and even oak is ok.

Alder is favored by many but fruitwoods are mild enough to not over power fish making them a good choice.
Cherry and apple are very good choices.

A cute little Alaskan woman was going to send me some alder, but it never came! I thought it was especially good for salmon.

Goes with any fish?

dmaclaren -- Also, I've had smoked salmon that was smoked with an alder/pear combo--it was wonderful!!

There is a fellow up in this neck of the woods who uses only Sugar Maple for smoking fish. I have tasted his work, and it is wonderful. Give it a try.

We have a maple tree here; swamp maple. Beautiful tree, with classic maple leaf. Drys out to a very light weight, and does well in the smoker.

So, let's have a contest. Swamp maple vs sugar maple.

Maple works well - birch does too.

Salmon may well be the easiest fish to smoke. Another that I liked is steelhead - not as easy to find, though.
