I have run a model 55 for years with no problem at all. I recently picked up an Amerique and have destroyed several cooks because I get a very acrid white smoke coming off the cooker which I never had with my 55. I have changed woods, used less and nothing seems to work???
I am struggling with what could be different between these two smokers to create such a difference in the way the wood is handled. Any help would be appreciated...
