I am new to this forum and find it amazing! I have owned various smokers and the CS smokette 2 is my lastest upgrade. My first chicken was greeted with the "black goop" dripping from the vent hole. My last smoker would often do this as well. It appears to be caused by the initial moisture venting through and condensing on the cooler vent hole metal. This dissolves the smoke residue and drips. It seems to stop after a period of time. I seached and found a recent post, but no real solutions other than make a small drip shield. Would preheating the smoker help?

Also, now that I have the smoker home, will a 12 lb turkey fit in it?

As you're probably aware the 12-14 pounders are the chefs' choice and they fit easy.

I think the largest I have done was a 23LB,because it was there.

Something about testing the envelope?

Someone on the forum once did a 26.

I just wipe the occasional black off and move ahead.

I usually cheesecloth my turkeys,so it is not an issue.
