boiling new probes?

I don't think that is necessary. But I would suggest you running a hot and cold test on them plugged into the unit. The hot test is putting the probe in boiling water and seeing what the temp unit shows. The cold test is putting it in ice water to see what it shows also.

No. Boiling is to recover bad ones, why boil ones that are working fine?

If you want, use the high grade tubing to seal off the new ones so water can't get it, but ONLY after you test them.

I guess I was wondering about preventive medicine... but I guess that wouldn't help the woodbox shield melt on my old probe wire,now would it cal?lol!

Just some things I have to learn to be a little more careful with, but hey experience seems to be a good teacher so far.

Where does one purchase this tubing?

I'm wondering if heat-shrink electrical tubing would do the trick? If so, you can get it at Radio Shack or any electronics store. But I'm not sure if that is a food-safe plastic, or if it can hold up to 300 degree temps.

Heat shrink should stand up against 300 degree heat. After all, people usually use matches to shrink it on small jobs.

How far on either side of the wire/probe connection should the heat shrink reach? 1/2"-1"?
