Ok, I am smoking 3 butts this weekend for a 80th
birthday celebration picnic. The last time I smoked a butt in my CS smoker was with hickory and the meat was a very off putting grey color where ever it had come into contact with the bone. Any ideas on what caused this or how to prevent it?? Are you a bone in or bone out and why? Also I was reading about a lymph node in the butt that can cause a bitter taste if not removed. Anyone removing this tissue prior to their smoke? Thanks, gasser
