Brine
- 3 quarts water
- About 1/5 cheap rum,less enough for a couple a Cuba Libres
- 1 cup kosher salt
- 1 cup brown sugar,or what ya got
- At least a dozen whole cloves
- A couple tsp fresh ground nutmeg
- About a dozen whole allspice
- About a half dozen limes,lemons,oranges fresh squooze-whatever ratio ya got
Three days seems like a good time, stir it and swap it end for end a couple a times
a day-if ya remember.
I'd cook as hot as your cooker goes 'til about 150� internal.
If ya let it rest 1/2 hour,it'll slice purty.
