Ya want to be sure ya got enough to do the job,jus' like on them overgrown hollerday yardbirds.

Brine
  • 3 quarts water
  • About 1/5 cheap rum,less enough for a couple a Cuba Libres
  • 1 cup kosher salt
  • 1 cup brown sugar,or what ya got
  • At least a dozen whole cloves
  • A couple tsp fresh ground nutmeg
  • About a dozen whole allspice
  • About a half dozen limes,lemons,oranges fresh squooze-whatever ratio ya got



Three days seems like a good time, stir it and swap it end for end a couple a times
a day-if ya remember.

I'd cook as hot as your cooker goes 'til about 150� internal.

If ya let it rest 1/2 hour,it'll slice purty.
