I set the cookshack at 225 as I have always done. hours and hours later the reading on the digital display was 250 !!. the brisket was burnt on the outer 1 inch. did I have a fire?

Possibly. What smoker are you using? How much wood did you use? Was the smoker clean? Grease free?

I used 5 oz. of hickory. that's avg for us for the last 3 years. it's an Amerique model 66. it needs some scraping.
I think you need to verify the temp it was actually cooking at.
You also didn't say if it was a flat or a packer or what weight?
