Hi guys havent posted in a while so here it goes, bought a cs 025 in sept. and kept looking for a shed type to place 025 outside as i dont have cover other than garage and the smoke (i call it aroma) leaks into the house so had to find solution and the shed was it. Its a rubbermaid and tall... had notches recesed in sides but capacity was only 50# so built shelves inside, also installed vent 3 inches above hole of 025. My dilema is that briskets are cooking faster than they should like last night it took a 15#er 13hrs when it should take 22hrs at 225 degrees.End result is still VG but curious what causes it, i sawed 3" vent hole and wonder if should do a second one. Anyone with similar problem? Felipe

Felipe, It has to be cooking higher.I have seen some other members show pitcures of their smoker in small rubbermaid sheds. I would do like TNQ recommended, put probe in foil on shelf fire it up to 225,remember that it has 20 minute startup period, when cooker shows steady 225 see what your probe reads. You have checked that probe 1st.
The shed won't have any effect "insulating" the smoker any more, after all it has 800 degree insulation.

What could be happening is that when you're opening the door (are you?) it's not losing as much heat. Maybe how you were "using" it in the open is different than now?

There also may be less convection across the top of the smoker/vent hole and reducing that airflow will help the heat stay in (air flowing over the hole will tend to draw out the air inside).

Personally, all the matters is the end product, so you just need to update your notes with the new times and go with them.
