Saw this in a new BBQ book that arrived today, it explains brisket different than I've learned.

Question. Do you AGREE or DISAGREE with this description:

Howdy,Smokin'.

I have heard some old midwestern meatcutters debate whether point is deckle.They were taught at an early age-something about milkcows,lanterns,Chicago and fires-that there is a slight difference in the way it is cut and packed.

Just bein' a cook,I was really more interested in how to cook and eat it,than callin' it names.

I have been known to call a brisket- or two- names,before. Big Grin
