I have 2 small flats that are 3.5 and 4.25 lbs. Would you suggest injecting first, then cooking at 225 degrees to 165 degrees internal tempature. Then foiling, and continue to smoke until the internal temp reaches 185?
Looks good up to the "185*" part...check for tenderness at that point, therm ought to go in like a hot knife through butter...some will need to go a bit higher to achieve the tenderness you are looking for.
