Brisket temp prob

I would like to try folding the flat when I smoke my next brisket in my 008. How and where do I insert the probe? Do I enter from the side, top or bottom layer? Do I enter from the top? If so, how far into the two layers do I insert the probe?

Just think about getting the point into the thickest part of the flat.

That often will be the last place in the flat to come done.

After that,you are probing,until the probe passes thru-like butter.
