Hi, all
Has anyone tried letting an unfoiled butt rest in the 008/9 after the cook, perhaps with the door ajar? I'm no physicist, but I would think that as long as the air temp inside the smoker stays below the internal temp of the meat, the butt wouldn't dry out, but perhaps I am mistaken.
Thoughts?
