I just completed my first ten pound batch of these.

they seem to be very good. I think I would lay off the smoke a bit next time but otherwise I think they are great.

I cooked at 100 with the door open for about an hour then went to 140 with smoke for 5 hours then jumped to 170 to finish to 155.

I ran them through a cold water bath and you have what you see here.

Ok I guess i am not bright enough to post a pic sorry will figure that out later

Nice over all. they are spicy so if you dont like hot these are not for you.
