It's 12:40am, I've just thrown a brisket into my smokette, set it to 250 with a couple of chunks of hickory and a mesquite brickette. I'm going to go to sleep, wake up around 10:30 have a cup of coffee, read the paper and get ready for lunch.

I know that around 1pm, my brisket is going to be done and perfect. For now it's time to rest, get ready for a honey do Sunday and have sweet dreams.
