I know I have been away for a while but I really need help. I have a dear cousin over in Iraq who has requested I send him some smoked venison trail bologna. I feel that since he is risking his life for my freedom the least I can do is send hime some hometown goodness.
The problem is... I dont know how to ship this stuff overseas. I used instacure #1 in my mix and smoked to an internal of 160degf. Will this stuff last the trip? I have always refrigerated/froze it after smoking so I dont know what the shelf life is on smoked sausage. Hillshire farms products are simply vacuum packed and not refrigerated. Will my sausage do the same? The last card I sent him took almost two weeks to reach him. Any help in this matter would be greatly appreciated, Bubba

The problem with your question is no one wants to be held liable.

Your best bet would be to make some sausage. Freeze it. Then start the ticker from the time you take it out of freezer until the time you think it is unsafe to eat.

If you feel it is safe to eat after 2 weeks from taking it out of the freezer then go for it.

However, I would include a note saying what date you trust it up to. This way if it takes 2.5- 3 weeks your cousin knows it is on his shoulders.

Myself, I am a firm believer in refrigeration. I dont trust much. But they have been curing sausage long before the word refrigeration was even thought of.

Call your States Ag. Depart. or Health Depart. and ask them.
