any ideas on fresh catfish? I did a search not much came up.

I have smoked catfish fillets before. They were great!
I marinated them in Italian dressing for about three hours,patted them dry, sprinkled a little Tony Chachere's Creole seasoning on them. Smoked about one hour and 15 min with 4 oz. hickory. Good eating!

Yep,we have discussed them,and a little learning curve is always handy.

First time,you may have to take a few out in increments,and you'll be good to go.

I've done Crappie fillets at 225* for 1.25-1.5 hrs with nothing but seasoning on it. My wife likes it as well as grilled Crappie.

The fillets was 10-12" fish.

Let us know how yours turn out.
