I'm sure the big guys will have a good answer,but I've cooked yardbirds on a bunch of things,and don't ever remember a good skin at 300�.

I'm not a great skin fan,but I think ya need to get 350�-375 to crisp.

That's not to say that the birds wouldn't sometimes benefit by being cooked at higher temperatures anyway.

Just one man's opinion.
