I have a 008 Smoker.

Just did my first Butt. Great but now know how to make it even better.

Now...how much do you clean it after use? Is it like a cast iron pot? Clean out the big stuff but then let it "age" or take it back to shinny new?

I've cleaned/washed out the smoke box, rack and rack holders and scraped and wipped down the inside. Got rid of the crusty stuff.

Do I scrub down and get rid of the smoke stains as much as possible or let it "age?"

All I do is wipe the bottom with a paper towel and wash the racks. About every third cook I clean the wood box.

Aged is good for the smoker itself, but keep whatever touches the food shiny.

A sheet of wide foil on the bottom and a smaller piece on top of the woodbox will make life easier. Don't forget to punch a hole in the foil for the drain hole.
