Have old smokette and wondering how often to clean and how do you clean.

A light scraping with a 4" putty knife should be sufficient unless you're seeing signs of mold after a period of non-use, in which case 1-2 TBSP bleach + 1 gal of water.
The next step up would be a wipe-down with vinegar & water.
Harsh detergents & de-greasers are a no-no.

I foil the top tray just above the smoke/heater as well as the bottom and then throw that away fairly frequently.
I soak/clean the trays when they need it (depends on how much food sticks).

I would not use a metal putty knife for any cleaning on my 025. That would scratch up the stainless steel and open you up to other issues down the road. Do your self a favor and buy one of those plastic putty knives at the hardware store. They are perfect for the job and only cost a buck a piece.
