I have an Amerique and am wondering about the cold smoke baffle option.
I've never seen one, except for the poor illustration on sites that sell them.
Is the baffle an insulated piece of aluminum?
I have cookie sheets that look similar.

Ive never seen there baffle in person.

I take a rack and wrap it with 2 layers of heavy duty foil, set a half aluminum hotel pan on top filled with ice cubes.

Ive smoke many pounds of cheese using this method.

I have a cold smoke baffle for my 009.
It basically looks like a shelf that is about 3/4 to 1 inch thick, I believe it is insulated. I use it for cheese and other heat sensitive things I smoke. I does make a big difference in the ability to keep a cool temperature especially when used in combination with the pan of ice on top.
I broke down and ordered one from YardandPool.
I ordered it Monday and it was here Wednesday, with free shipping!
Going to try smoking some cheese later today.
