My Sm150 came with a baffle but I see in the online picture there's a different little pan (I assume for wood) is that needed? I want to try to smoke some bacon.
There is a 'roof' over the wood box that directs drippings away from the wood box. You still use the heat to get the wood smoking. The cold smoke kit sits on the lowest shelf/bracket and insulates the meat or cheese or whatever from the direct heat. You can set a pan of ice on the baffle to lower the temp if necessary.
