As our catering business is continuing to grow I think it's time to bite the bullet and get a heavy duty commercial dishwasher. There are times I fire up the hot water pressure washer but this makes a mess and is kind of dangerous although it does get the heavy stuff off really good.

I am looking for some input if anyone on here has one. Our hardest pans to clean are when we do cheesy potato's. It takes me at least 20 minutes to clean a full sized 6" deep pan. If I have more than one I usually fire up the power washer.

So we need something that will fit a 6" deep full sized pan and has multiple settings.

Suggestions please!!

The gold standard in the restaurant world is the Hobart AR-15, available in hi temp & lo temp options. The lo temp will require more chemicals and supposedly doesn't do as good a job as the hi temp model. The hi temp will require a hot water booster. Either will run about 60 racks @ hr. Price on the hi temp is about $13K and you'll need a SS dish table.

The other option would be an under-counter Hobart, which is half the cost. Whether it will handle 6" full hotel pans, I'm not sure.

I've used the hi temp AR-15 at the restaurant for 9 years and it's been very reliable. Prior to that we had a Jackson machine that took round racks. It was a never ending source of repair and $$$.

Have you tried soaking the cheesy potato pans overnight in a pot sink?
Thanks MaxQ. I've been looking at those hoping a good used one will pop up. Soaking does work but I am working with a limited amount of space. I usually like to clean up right away and get it done. The hot water washer I have does pretty good. I made a short gun with a rotating zero tip on it but at 190F water with a zero turbo tip and 4000PSI, I have to be mighty careful.

Guess $13k is better than picking my nose with my elbow Razzer
Another option you might want to look into is leasing one. There are companys that lease them and you use there chemicals, they do all maintenance at no cost, if it breaks, they fix it. We lease one at one of my accounts for a little over 3000 a year, like 275 a month depending on the size and model. The one we have is a larger conveyor model. A good option if you don't want to drop 10-15 thousand all at once.

There are lease options through the big food distributors. Sysco, US Foods, and PFG/Roma. And there maybe a local option available to you. Check with one of your local wholesale restaurant supply places. They would likely know someone. That's what I did and pay $95/month plus chemicals for an undercounter unit that holds full size pans. They repair anything wrong at their expense.
