I have a catering job that requires me to cook a suckling pig about 25# my problem is I only have either a cookshack smoker or a grill to cook it on. I want to cook it butterflied/split my question is can I cook this in my 105 cookshack and if so how do I do this and what do I need to get etc. Thanks for any feed back.

Thanks for the info, I guess it can be done although I am looking for a buterflied version and am thinking of using skewers to hold the piglet open during cooking and maybe hanging it in the 105 smoker, but what do I use to hook that sucker to the racks ? And will that hold it ? Heck the size pig I am cooking might just fit on the rack ? Does anybody know the width of a buterflied piglet 25# ???
