I put a 14 pound brisket in yesterday at 4 pm. I am thinking I can cook it to 190, then just open the door and let it freeze. The temperature is about 19 here on the deck of the house.That is cold for these here parts.
It isn't much fun going outside in your jammies to test for "done-ness".
I cut a pound of fat off, I think,and left it outside in a pie pan for the birds.Do you think they will eat suet without it being rolled in seeds?? LOL. If not, the possums probably will.

Yes, the birds will eat suet without it being rolled in seeds. The ones that are most likely to eat it are the woodpeckers. We put out suet and get Red Bellies, Red Heads, Downies, Nut Hatches, Flickers and an occasional Brown Creeper. All are woodpecker varieties. One thing though, if your pan is on the ground the woodpeckers will probably avoid it. They like their food in a tree. Try putting the suet in an old mesh onion bag then suspend it from a tree limb. Should get you more woodpeckers and fewer Starlings that way. Starlings by the way will eat anything so beware.
