Hello...My name is Bill - I was wondering if anyone has had any on-hand experience with the Cabelas 80 or 120 dehydrators. I currently use the excalibur dehydrator, but am looking for something a tad...bigger. I make 40-60 bags a week and need something dependable - it seems like a decent price, but I was concerned over the bottom fan rather than rear fan...are there any big advantages/disadvantages to one or the other - the excalibur works great but, as mentioned above, needs to be a tad bigger.

Anyway, thanks for taking the time to read this,

-Bill

Most of us here use our CS smokers for jerky. I also have an Excaliber but I haven't used it in a couple of years (since I got the CS) and may not use it ever again except for fruit or other stuff but I don't do much of that.

If you're happy with the Excaliber, I would get another one. Probably the best way to increase your output.
Bill, I have a cabella's 80 litre model dehydrator and it worked well for me last time I used it. I used it when making jerky from sliced meat as well as ground beef sticks. If you make alot of jerky you should consider the large model because it offers twice the capacity and doesn't require a stand to make it at a comfortable working height. It's a good product for the money and Cabela's is a good company to order from because they really stand behind their products!
Thanks to all for the opinions on dehydrators. Worst thing that can happen is to ship it back at my expense. I make right much now and the demand is growing. I am going to go with the big one if I get one and if I have surplus I am going to vacuum seal and freeze since I use no preservatives. If I have a taste difference I will drop back and punt. Thanks again for the responses.

Bill
