I have made 4 attempts at making bacon. have been using a maple or honey brine mix from a major sporting goods catalog company. Have had so so results. I've let pork bellies sit in brine for 3-4 weeks. dried and smoked but not happy with results. Not much flavor, bacon is very edible but lacking flavor. Looking to try a new brine mix. anyone have resources for a ready to use brine mix. Will take suggestions for enhancing the flavors also.
