Hello all,
I hope I'm not being redundant here, I did a few searches on this but didn't come up with an answer.
I just bought all new Stainless Steel grills for my 055, along with a few seafood grills, rib hooks, a new stainless drip pan and a cold smoke baffle. It's a whole lot of new stainless steel. I ran everything through the dishwasher to get any manufacturing gunk off. Now I was thinking of putting it all in the smoker with a chunk or two of wood and season it for an hour or two ...or is that necessary?
I just want to make sure I don't get some nasty metallic flavors in my next smoke!

Thing is, right now I'm smoking a lot of seafood, so not much oil to season the smoker when I cook. I do spray the grills with cooking spray though. So if that's OK, I'll go with it for now.
Salmon and trout has such a light flavor, some of it was picking up just a bit of metallic off flavor, I believe from the worn grills.

I plan to cook a big Pork Butt for a get together in a couple of weeks, should I leave as many racks as I can inside while it's smoking?
