I often use my PG-500 as a wood-fired oven. I close-up the LHt and HHt to hold tight temperature control and provide a hint of smoke flavor. When I want more smoke flavor I increase the difference in the two settings but it creates wider temperature swings, which are not usually important (but I suppose you readers already knew that).
Anyway, does anyone have a good recipe for baking a ham in the PG grills? I may just use my favorite recipe intended for the kitchen range.
BTW, if you post a recipe please also post your LHt/HHt settings and some comment on the smoke flavor strength.
