In my opinion, heart is too lean to smoke. If you wrapped it in bacon and cheesecloth...maybe. Better to get a smoky flavor by grilling slices quickly. Heart gets tough so fast, that is probably why your friend sliced it so thin. You might try marinating it for days in a tenderizing marinade, cooking it long and slow, and then putting in the smoker just long enough to get some smoke on it. At a really low temp, since it will already be cooked. I cook heart for up to 3 days in a crockpot to get it tender. Moose hearts are huge buggers!
I would stuff your heart with a very moist something...say, reconstituted dried apricots and bacon?
Anyway, my opinion is to cook it first, then slice and put into heavy smudge, just long enough to put a smoke flavor on it. Heart will absorb it very quickly!
I wish I had access to more game hearts. I've been wanting to experiment with Heart Jerky.
