"Extreme" - just looking for a way to get the GenX'ers (possibly your kids!) excited - "kick it up a notch" - new and different ways to "serve it up" - c'mon Emeril - jump in - "BAM!!!"

Maybe this ain't so new to you seasoned folks - but after I made a few pork butts (and froze about 5# worth), I started wondering to myself ... "self, what else can I do with this stuff?"

1. Serve it on noodles with mustard sauce - $#%#@%&&^%$##@ Awesome!!!

2. Serve it as the meat for tacos - I believe that Mexicans call these carnitas!! Truly delicious.

Anyone got some other ideas?

3. Have not tried it (then again, maybe I have!!), but putting pulled pork in Smoked baked beans - that sounds real good. (I actually think that I have used leftover smoked ham)

As yummy as it is, when you do pulled pork, you get an awful lot ... variety, is it the mother of invention? Speaking of mothers, would Emeril's mom ("Hilder", I believe he calls her) just toss some parley in and call it Portuguese Pulled Pork?

Hi AAHH,
We like pulled pork in baked beans or topped on baked potatoes. There is a good recipe for the topped potatoes in the Cookshack cookbook. I can post the recipe(s) if you'd like.

I'll have to try the noodles and mustard sauce. That sounds interesting, plus my wife is a pasta freak. Would you mind posting your recipe?

Howdy AAHH,I mentioned to Smokin' that you should think about posting your template-if it can work that way.I have 25 years of 3 ring binders and spiral bound notebooks from when ECB's were$10.88.The pulled pork on noodles works great.The Q joints in Memphis have been serving BBQ spaghetti for at least 30 years.Sprinkle the pulled pork with butt rub,a squeeze of fresh lime and wrap in fresh 8in. flour tortillas for a great fajita.

Noodles, pulled pork and sauce (aka, BBQ Spag)

Not much to it -

I use Spaghetti noodles, topped with pulled pork (or cubed, as I do it), and then I top with Smokin's Mustard sauce. Sometimes I mix in some BBQ sauce (I guess it depends on how "saucey" I feel :-) )

It's great.

Hey... back to the pulled pork leftover recipes:

I did a sort of quasi-pressed-Cuban sandwich thing that came out great. I chopped the leftover butt and sauced it, then hollowed out some long rolls, then sauteed some onions and mixed the onions with the pork. Then put chesse on the bread, added the pork and onion mix, then some cooked bacon, then more cheese, then buttered both sides of the roll, then grilled the whole sandwich in a pan, flipped it over, pressed it down... yum! You could probaby use some ham slices instead of the bacon... or... you know what' comin'... the triple threat -- pork'n onions, ham AND bacon!!! With cheese!!! Then run straight to your cardiologist!
AAHH,back to the uses for pulled pork.The FL chain Fatboy'sBBQ,that started Sonny,s BBQ and Woody's BBQ has a very popular BBQ salad.It is a little like a taco salad and like a Chef' s salad.They replace the meats on either with pulled pork ,use your cheese of choice ,and what appears to be a creamy ranch dressing flavored with a litttle Q sauce.It works well in hot weather when you don't want to cook or eat heavily.

We do a takeoff on Stogie's quesadillas with Grands 8 large biscuits.Press each out into abut a 6in. circle,add about 3oz. brisket or pork,a little sauce,some onion and a little melting cheese.Wet edges with water or a little beaten egg and fold in half.Press down edges with fork tines to seal.Bake at 375� for 8-10 mis or till golden

I just did Pulled Pork Fried Rice - turned out pretty good.

Scrambled an egg - set aside.
fried up some leftover rice, added veggies, and pulled pork, then added the egg.

I did not season it very much. Instead, I put some of Smokin's Mustard sauce on at the end. It tasted pretty good, but the mustard sauce made the concoction kinda mushy.
