I have an older (2014) FEC 120 that I'd like to put in a take-out restaurant that I'm building out. I don't think I'll have enough room under the hood for it. Cookshack offers the PA004 Fle Collector for smoke removal. Does anyone have any experience with a health department about using this instead of putting the smoker under a hood or in a smoke house? I know the newer style Flue Collector for the FEC 120 won't pass, but will the older style pass since it covers the whole top of the smoker instead of just the exhaust vents?
