FEC100 questions

I am a new owner of a FEC100. If I want to start my cook at 180 for 7 or 8 hours, can I then set my hold temp to a higher temp of 250 and if so, will it continue at that temp till I manually turn it off? Thanks in advance for helping a new owner!
