Well I finished my first butt last night. Let me just say, never do smoke anything with a gas grill, at least not mine. I fired up the grill and it would not get under like 290 with the lid on. So I actually had to prop the lid up a little, about 3 inches, and it would sit between 225-250. The good thing is is that the lid is huge and the butt was on the top rack which was actually up inside the lid, so it stayed pretty warm in there. After a while I started experimenting and threw in two cups of ice and closed the lid which kept in at about 225 for 20 to 30 minutes then it would slowly climb back to 250 and i'd throw another cup of ice in. After four hours I opened it to flip it over and it looked nice, even with all the problems. But I didn't want to keep doing all that for another 6 or 8 hours so I gave in and put it in the oven on 300 for 4 hours. Not what I wanted to do but I did. I was worried that it might not turn out, but a little after 8 hours it was right around 200 degrees so I pulled it out and let it sit for an hour. Then I pulled it apart. That thing was awesome. The outside was pretty tough at first but you couldn't really tell after an hour so I guess that's what I wanted. I did over salt the rub a little, but again, not noticeable once all mixed togeter. And dang that thing was juicy. I might just have to get me one of those little cheap smokers from Wal-Mart. I'd love to have a Smokette, but I'm just a pour 20 yr old college student, so I have to do what I can. Sorry for the long post.
