Received my SM020 last week. Picked up a 2 butts at Sams club (approx 19.5 lb). Placed (1) butt in the smoker at 7PM on Saturday, with 2 chunks of hickory. Set temperature at 225. Took it out Sunday at 1030 AM, internal temp was 198. The pulled pork was excellent. Smoked the other butt on Monday using the same method and with the same result. However, after the first smoke, both hickory chunks were pretty much burnt to a small nub. After the second smoke, one piece almost burnt up, but the other piece was only burned to approx. half of its original size. Not sure why the diffrence?
