I've been reading up here on the Forums (and elsewhere), and tomorrow I'll be giving my 008 it's first shot at Baby Back ribs. Boiling down much of what I've seen, any comments regarding the following thoughts would be great - this is a 3 lb. rack of ribs:
1. Cook at 225* for about 6 hours (maybe 7).
2. Take off the membrane before applying the rub.
3. Rub put on a bit before going into the cooker (but not overnight).
4. Use the toothpick test to see about doneness.
5. Once done, take out and serve - with sauce.
I'm trying to keep it sort of simple (my second cook) - but am I missing anything that will add to the enjoyment?
